Technique: Stemming and crushing of the grapes. The alcoholic fermentation takes place in steel tanks at controlled temperature. Maceration on the skins varies from 15 days to 20 days. The malolactic fermentation takes place in barrels. The refinement in wood lasts 12 to 18 months and the subsequent refinement in bottle lasts for about 12 months.
