This
is a special selection of the WHITE
MONTESCUDAIO production of the Estate
of Sorbaiano. This selection is pertinent
to the vineyard (or more precisely,
the Lucestraia vineyard) and the grapes
(a special selection of the best-exposed
branches that have reached the right
point of ripening with absolute priority
given to the quality of each grape)
after having accurately cared for the
vineyard, especially concerning its
productiveness which never exceeds 35
hl for hectare.
At wine-making, the must obtained by
means of soft pressing of the grapes
is slightly and statically decanted
and therefore placed in 225 litre kegs
to ferment for about 4 month. |
